Summertime is the perfect time for a grilled dinner. Start with a quick garlic herb marinade of salmon filets and then grill for 10 minutes. A great side dish is grilled asparagus. You can add potatoes or a wonderful fresh salad to complete your meal. As usual, crusty bread or rolls completes this fast and tasty meal that also provides great nutrition for your family.

The marinade based on olive oil only takes minutes to make. Add lemon juice and red wine vinegar for a tangy taste and tender salmon. The addition of garlic, basil, parsley and rosemary add delicious flavor to the dish. Place salmon in a zip lock bag and pour marinade over fish. Place in refrigerator for 20 to 30 minutes. Grill for 10 minutes and your delicious salmon is ready.
Garlic Herb Grilled Salmon
Use organic when available. Serves 4.
Garlic Herb Grilled Salmon
Ingredients
- 1/4 cup lemon juice
- 1/2 cup olive oil
- 2 tbsp red wine vinegar
- 1 tbsp honey or brown sugar
- 4 tbsp minced garlic
- 2 tbsp chopped fresh basil
- 1 tbsp chopped fresh parsley
- 1 tbsp chopped fresh rosemary
- 2 tsp salt
- 1 tsp black pepper
- 1 1/2 lb fresh salmon cut into 4 filets
Instructions
- Place salmon in zip lock plastic bag
- In bowl mix the rest of the ingredients with a whisk or shake in jar
- Set aside 1/4 cup of marinade for basting
- Pour rest of marinade over salmon and zip close
- Refrigerate from 20 to 30 minutes
- Grill salmon 8 to 10 minutes basting periodically
- Serve with grilled vegetables, potato, and crusty bread

Ooh, this looks yummy! We all enjoy salmon in this house. Asparagus on the other hand, I cannot get right at all!

not if it isn’t marinated too long and grilled too long, it should be ok
I did end up grilling our salmon last night (not this recipe because I was missing some ingredients) but it was much easier to grill than I thought. I will definitely be adding this recipe to our menu for next month.
