Easy Gazpacho

Gazpacho or Gaspacho is a cold soup made of raw, blended vegetables. It originated in the southern regions of the Iberian peninsula and spread into other areas. During hot summer days, it is a cool and refreshing meal.  I remember the first time I made it with my sister one hot July day.  I love vegetables, and the soup was so tasty with the flavor of my garden favorites.  One nice thing about gazpacho is how easy it is to make and to modify.  Hate the taste of raw onion? Diminish or eliminate the amount added.

 

 

 

 

After blending your soup, refrigerate it in a covered bowl for 2 hours before serving.  You may garnish with herbs, bread crumbs, or chopped veggies. I like it with crusty bread or rolls. It is a great no cook entree or even a first course of summer meal.

 

Easy Gazpacho

Use organic fresh vegetables when available.  Recipe is suitable for vegans.  Serves about 8 servings.

Easy Gazpacho

A classic chilled gazpacho is perfect for a hot summer day. Serve this traditional Spanish gazpacho chilled in a glass or a bowl. You can also serve in shot glasses for an easy, make-ahead summer appetizer!

Ingredients

  • 2 lb tomatoes peeled and quartered
  • 1 large cucumber peeled and sliced
  • 1/2 small onion peeled and sliced
  • 1 1/2 red wine vinegar
  • 1 clove garlic minced
  • 1 green bell peppper seeded and sliced
  • 1/4 cup extra virgin olive oil
  • 2 tbsp water if needed
  • salt to taste
  • optional garnish with chopped cucumber, bell pepper and/or onion, herbs, or bread crumbs

Instructions

  • Combine tomatoes, cucumber, bell pepper, onion, vinegar, garlic, and salt in the bowl of a food processor.
  • Pulse until blended.
  • Blend on low speed while pouring olive oil in slowly until gazpacho is smooth,
  • Optional add a tablespoon of water if too thick.
  • Place gazpacho in bowl with lid and refrigerate for 2 hours.
  • Serve chilled with optional garnish and crusty bread or rolls.

  1. This sounds better than I originally expected when I read it’s a cold soup. I remember having had gazpacho once but it was just a store-bought can of it and I didn’t like it then. This one sounds pretty tasty though. #MMBC
