Gazpacho or Gaspacho is a cold soup made of raw, blended vegetables. It originated in the southern regions of the Iberian peninsula and spread into other areas. During hot summer days, it is a cool and refreshing meal. I remember the first time I made it with my sister one hot July day. I love vegetables, and the soup was so tasty with the flavor of my garden favorites. One nice thing about gazpacho is how easy it is to make and to modify. Hate the taste of raw onion? Diminish or eliminate the amount added.
After blending your soup, refrigerate it in a covered bowl for 2 hours before serving. You may garnish with herbs, bread crumbs, or chopped veggies. I like it with crusty bread or rolls. It is a great no cook entree or even a first course of summer meal.

Anything that can be made ahead is always a winner with me. Gazpacho is a particular favourite of mine, I love anything with tomatoes but have never made it. Thanks for the recipe!
it is such a tasty and easy dish to make – thanks for the kind words
I make soup every week in the winter but just can’t do it when it’s hot. Gazpacho is a great substitution!
This sounds better than I originally expected when I read it’s a cold soup. I remember having had gazpacho once but it was just a store-bought can of it and I didn’t like it then. This one sounds pretty tasty though. #MMBC
It looks delicious Carol and ideal for summer. Thank you for this great recipe.
…something that I have never had.
We had gazpacho at a friend’s house a couple of years ago and I’ve been meaning to try making it too – thank you for sharing the recipe :o)

I don’t think I have ever tried this before. I love soup and I imagine this is fantastic in the warmer months. x
I’ve enjoyed this soup in Spain but I don’t think it’s suitable for our British climate.
Yummy! It’s been sooo hot even up here in the PNW so a perfect idea. It’s always so fun visiting you — I never know what magic awaits. Whatever it is … food, travel, flowers, decorating ….. it is always fun to read.
Sallie you say the nicest things – hope you have a good week
I loved your idea to serve it with a crusty bread… that sounds amazing! This is such a fabulous dinner idea for these hot August days.
This does look easy and very delicious! Saving on my Pinterest soup board to try soon.
