I do love avocados. I use them in salads, in smoothies, and even on toast. Today I’m trying something new for me – breaded avocado fingers baked until golden brown. I had to try them. Avocado is so healthy for you and with a few additions of sharper flavors like lime or lemon juice and garlic, it becomes a delight to eat.

They are a great appetizer, snack, lunch or side dish. Avocado finger fries are rolled in flour, dipped in eggs, coated with bread crumbs, and baked in the oven until golden. Serve them warm with your favorite dip or sauce. Below are some interesting choices of dips:

Avocado Finger Fries
Use organic when available. Makes about 18 to 20 fingers.
Avocado Finger Fries
Ingredients
- 3 ripe but firm avocados sliced lengthwise
- 1/2 lime or lemon juiced
- 1 or 2 eggs
- 1/2 cup flour
- 1 1/2 cup bread crumbs
- 1/2 tsp garlic powder
- 1/2 tsp paprika
- sea salt and fresh ground pepper to taste
Instructions
- Preheat oven to 425 degrees F
- Line cookie sheet with foil or lightly spray with cooking spray
- Sprinkle lime or lemon juice over avocado slices to preserve color
- Place flour in bowl
- Dip slices in flour
- Lightly beat eggs in large bowl
- Dip slices in egg wash
- Mix bread crumbs with garlic powder, paprika, salt and pepper
- Dip egged slices into bread crumbs and coat
- Place slices on cookie sheet
- Spray lightly with olive oil
- Bake about 20 minutes until golden
- Remove from oven and cool about 10 minutes
- Serve with favorite dipping sauce

This is an interesting idea for a snack. I’m not a huge fan of avocados but my family loves them. Baking them in the oven makes them healthier too :o)

When you said fries, I was worried! But oven baked and breaded avocado sounds really good! I’ve got to save this one. The chipotle sauce looks good too.
I agree – frying is not a healthy option but I do love to “bake fry” if you know what I mean
