Cobb Salad

I’ve shared many salads here on the blog, but it dawned on me I’ve never shared one of my favorites, a traditional Cobb Salad.  It contains many of my favorite ingredients:  eggs, bacon, tomatoes, avocado, chicken, and cheese.  Back when I was working and attending lots of meetings, I loved the lunch meeting with a big bowl of Cobb Salad: crunchy romaine lettuce and all the wonderful ingredients and of course, a great salad dressing.  I miss that. The lunch not the endless meetings!

Part of the traditional Cobb is rows of ingredients on top of a bed of lettuce.  You can always adjust the ingredients to fit your inventory or likes.  It makes a beautiful presentation too.  The traditional salad included chives as a garnish but you can use green onion tops or skip it if you prefer.  A red wine vinaigrette was the original dressing of choice, but if desired, you can use your favorite dressing. Feel free to drop an ingredient or add another like cucumbers.  The chicken can be cooked in so many ways – baked, fried, poached, or grilled.  Add crusty bread, and you’re dinner is ready. I prefer romaine but if you only have iceberg, feel free to substitute.

Cobb Salad  is a great main-dish American garden salad typically made with chopped salad greens, tomato, crisp bacon, chicken breast, hard-boiled eggs, avocado, and blue cheese,,

Ingredients

Salad

  • 1 head of romaine lettuce chopped
  • 4 hard boiled eggs, peeled and quartered
  • 12 oz cooked chicken breast chopped
  • 8 slices cooked bacon, crumbled
  • 1 avocado thinly sliced
  • 4 oz crumbled blue cheese
  • 5 oz cherrry tomatoes halved
  • 2 tbsp finely chopped chives or green onions chopped

Dressing

  • 1/3 cup red wine vinegar
  • 1 tbsp Dijon mustard
  • 2/3 cup extra virgin olive oil
  • salt and pepper to taste

Instructions

  • Mix vinegar, oil, mustard, and salt and pepper in mason jar with lid or a bowl .
  • On large platter place lettuce.
  • Add rows of hard boiled egg, chicken, bacon, tomatoes, cheese, & avocado.
  • Garnish with chives or green onions.
  • Shake mason jar well.
  • Drizzle salad dressing over salad and serve.

  1. Oh my; this looks delicious! I love a good salad in the summer and I am always trying to change up my lunchtime salads so I don’t get sick of them. Pinned.
