I love a good muffin for breakfast. Today’s recipe is a tasty, healthy muffin made with a baked sweet potato, whole oats, and whole wheat flour. Add a little honey and a mix of spices for a delightful taste. If you have a left over baked sweet potato, this is a great way to use your leftover and make an easy breakfast or snack. I like the topping which adds a little crunch of flavor.
Whole Wheat Sweet Potato Muffins
Ingredients
- 1 baked sweet potato
- 1 cup whole wheat flour
- 1 cup old fashioned oats blended
- 1 tsp baking soda
- 1/4 tsp ground nutmeg
- 1 tsp ground cinnamon
- 1/4 tsp ground ginger
- 1/4 cup vegetable oil
- 2 eggs lightly beaten
- 1/2 cup honey or agave nectar
- 1 tsp vanilla extract
- 1/2 cup milk
Topping
- 1/4 cup old fashioned oatmeal
- 1/4 cup sliced almonds
- 1/4 cup brown sugar
- 1/2 tsp cinnamon
Instructions
- Bake sweet potato in oven at 400 degrees F (200 degrees C) for 40 minutes
- Let sweet potato cool, peel, and mash
- Lower oven temperature to 350 degrees F (175 degrees C)
- Grease muffin cups or use liners
- Blend 1/2 cup old fashioned oats in food processor or blender
- Whisk together blended oats, whole wheat flour, baking soda, salt, the 1 tsp cinnamon, nutmeg, and ginger
- Stir in oil, eggs, milk, vanilla, honey, and mashed sweet potato
- Mix until ingredients are moistened
- Spoon batter into muffin cups
- Process topping ingredients: oats, almonds, brown sugar, and cinnamon in food processor or blender
- Sprinkle topping on top of unbaked muffins
- Bake in oven until golden about 18 to 20 minutes
