15 Luscious Soups For Winter

Like many folks during cold days, I like a comfy throw and nurturing hot soup to keep me feeling cozy and fine.   I’m a huge soup fan. Start with a great broth, add fresh vegetables and herbs, and enjoy a fast, healthy meal.  Today let’s look at luscious soups to make you feel happy this winter.

 

I. Easy Meatball Soup

I use extra-lean ground beef with eggs and bread crumbs for my meatballs.  Let them cook in the broth with carrots, pasta or potatoes, and you have a tasty meal with crusty whole-grain bread or cheese toast.

Winter is the perfect time for a warm, filling soup like Taco Soup.  Serve with tortilla chips, a salad, and  your dinner is ready. Put it on and 3 hours later you are ready to eat.

This yummy sweet potato-lentil soup with carrots and apple is both delicious and filling. That one apple with a little cumin and chili pepper adds a special flavor to the soup, and your family will ask for more.  You can eat it chunky  or use a immersion blender to create a smooth, thick soup filled with flavor. For a vegan soup, use vegetable  broth and drop the yogurt.

Zuppa Toscana, “zuppa” means soup in Italian. “Toscana” refers to the Tuscany region of Italy. Therefore, “Zuppa Toscana” translates to “Tuscan soup” or “Tuscan-style soup.” Traditionally, this soup is made with lots of veggies, beans, potatoes, olive oil, spices, and Italian bacon. My recipe is similar to the one at Olive Gardens except in my version I use low-fat turkey sausage.,     According to Live Strong, turkey sausage has half the calories of pork with 1/3 the fat.   If you have to have pork sausage flavor, look for a lower fat like Johnsonville mild Italian links. Serve with a crusty bread and a green salad.

We all grew up eating tomato soup, usually from a can. As a kid, I loved it with a grilled cheese sandwich.  Now it’s time for grown-up food and homemade tomato soup. So tasty and comforting on a cold winter day. Basil Parmesan Tomato Soup has complex flavors not only from the herbs and cheese but also from the vegetable base. A delicious main course soup for lunch or dinner with grilled cheese sandwiches or cheese toast.

This creamy and thick soup has a depth of flavor without adding cream.  I use yogurt, but if you have to avoid dairy, you can substitute coconut or almond milk.   Simmering pumpkin with garlic and onion is the key to the taste.

Finally, they blanketed ther dish with Gruyère and reduced-fat Swiss — because what’s onion soup without the cheese?

This soup uses the super green, kale. I know some folks don’t really like them. If you find them strong flavored, I suggest you look for baby kale which is milder.  The nutrients in kale can help boost well being and prevent a range of health problems.  Start with a great stock and add sauteed kale, celery, carrots, potatoes, herbs, white beans, and a can of fire-roasted diced tomatoes.  A fast tasty and healthy soup for a cold winter day.

    Yes, we cooking soups all over the year too. Each soup has traditionell time of the year for the respective season. For example, cabbage is always in autumn. And mushrooms too.

  3. Some lovely hearty soups there! I am pretty boring with my soups, it’s generally, tomato, or carrot, or some other vegetable. I haven’t had a split pea soup in ages though, might give that a try. The Chicken noodle soup looks nice too. I think I’ll have to pin the post for ideas later. Thanks
