Gingerbread Pear Muffins

 

Today I’m getting into the season with moist and flavorful muffins combining ginger, molasses and pear. They are so good with a cup of hot chocolate or coffee on a cold morning. They are moist and sweet, but not too sweet.  A delicious treat any time of day.  They would be make a fantastic baked gift this holiday season.

Gingerbread Pear Muffins

These moist and flavorful muffins combine ginger, molasses and pear. They're great for breakfast or a snack. Use organic when available.

Ingredients

  • 2 cups whole wheat pastry flour
  • 3/4 cup molasses
  • 1/4 cup brown sugar
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 1 tsp ground ginger
  • 1/2 tsp ground cloves
  • 1/2 tsp salt
  • 2 large eggs
  • 1 cup buttermilk
  • 1/4 cup vegetable oil
  • 1 pear peeled, cored, diced

Instructions

  • Preheat oven to 375 degrees F (190 degrees C)
  • Grease 12 muffin pan or line with paper liners
  • In large bowl whisk flour, sugar, baking powder, baking soda, cinnamon, ginger, cloves, and salt together
  • Beat eggs in separate bowl
  •  Stir buttermilk, molasses, and vegetable oil into beaten eggs until smooth
  • Add wet mixture to flour mixture and stir until batter is moist
  • Fold in pears
  • Spoon batter into muffin cups half full
  • Bake in oven for about 20 minutes until a toothpick inserted in the center of a muffin comes out clean
