I love a good muffin that doesn’t have too much fat. I also love banana bread with its moist, rich texture and taste. Today I’m sharing muffins made with ripe bananas and a sprinkle of walnuts. If you can’t eat walnuts, like my sister, add pecans. They’re always delicious. One of the things I love about muffins is they are great for breakfast, as a snack, or even as a dessert with less fat and sugar than cupcakes. You can’t go wrong.

Happy MosaicMonday
Happy Monday!
I have all of these ingredients in my kitchen right now which is a rare thing for me! I might just whip up a pan of muffins this afternoon for us to enjoy with a cuppa!
sounds like breakfast time to me!
…they look great!
Before Covid when I went to the store myself, I would get just the amount of bananas I would need so they wouldn’t get too soft. But since, the bananas come in bunches and by the time I near the end of a bunch, it’s a little dicey! This will be a wonderful recipe for those last three!
I’ve halfed banana bunches most of my life as I like them just ripe. When they’re really ripe I have to make banana bread or muffins!
These look so good! My family would polish these off for breakfast. Pecans sound an nice alternative as well.
pecans are always good in baked good
These sound yummy and I like the addition of coated nuts on top – will definitely try this recipe :o)

I’m the same way – it’s a struggle to try to eat right and still satisfy my sweet tooth.

A great idea … especially when there are ripened bananas in the kitchen just waiting to be useful.
