Easy Summer Breakfasts

We’re in the hot days of summer and who really wants to cook?   Today let’s think about tasty and quick breakfast ideas.  Click on the title of the food or photo to go to the recipe.

I. BAKED GOODS

I know the last thing you want to do is heat up your home with oven, but one morning of baking could feed the family for a fast breakfast for the rest of the week.  I’m at the point that I only turn on the oven early in the morning.  If I use it in the afternoon or evening, I waste so much electricity when the a/c works hard for hours trying to keep my home cool.  Of course, you can also buy from a local bakery too. Let someone else do the baking.

I’m a big fan of fresh blueberries when they’re in season.  I add them to everything even a salad.  Juicy blueberries in a muffin are a great way to start the day. Check out the New York Times‘ recipe for Jordan Marsh’s Blueberry Muffins.

B. Zucchini Bread

One of the bonuses you get from baking is having a breakfast ready to eat with the addition of a hot beverage. Let’s face it, a lot of mornings I don’t want to spend a lot of time fixing my first meal of the day.  When you make the zucchini bread, I suggest you make two and freeze one.  Defrost later for quick breakfast slices.

II. CHIA PUDDING

Last month I shared recipes for several variations of chia pudding   including coconut and almond chia puddings. Delicious has a great recipe for coconut chia pudding with gluten-free granola.

B.   Blackberry Chia Breakfast Bowl

Over at A Better Happier St Sebastion, a great breakfast bowl of chia, milk, a banana, fresh blackberries, Greek yogurt, and honey is offered. A few simple preparations, refrigerate over night, and enjoy a tasty morning delight with all kinds of healthy attributes.

III. EGGS

This breakfast sandwich is quick, easy and delicious. Cheesy eggs with avocado and tomato slices  sit on slices of Italian bread.  What a great way to start the morning.

Besides being a great way to use hard-boiled eggs after Easter, avocado egg salad just plain tastes good!  I like it on crackers or whole grain toast for a fast meal in the morning.

 

D.  Hard Boiled Eggs

Another easy breakfast is a hard boiled egg and toast. Have you tried an electric egg cooker? It’s one of the best buys I’ve made in the last year. Put your eggs on and walk away. It turns off automatically. You can make soft or hard boiled eggs. I keep a few boiled eggs in the refrigerator for an easy meal.  You can eat them plain or top the eggs when served with your favorite ingredients like sliced green onions, carrot or pepper slivers. (There really isn’t a recipe for this one!)

IV. OATS

If you love smoothies but crave a thicker breakfast, try making a frosty smoothie thick enough to eat with a spoon and bowl. From the tropical rain forests of Brazil, we have what many consider the most super fruit in the world, the small acai berry. Low in sugar and loaded with anti-oxidants, acai berries have been hand-harvested and eaten by natives since early times. The taste is somewhere in between mixed berries, dark chocolate, and red wine. The distinctively exotic taste of Açaí.  Buy frozen acai and add frozen bananas with berries and granola.  You have to try it!

A wonderful way to start the day is with a vibrant apple cucumber green smoothie packed with vitamins and minerals. Fresh apples, spinach, ginger and local honey make the perfect combination for an easy breakfast.

No matter what kind of smoothie you make, adding yogurt adds proteins, nutrients and creamy flavor.  It’s great in a green smoothie or a fruit smoothie.  One of my favorite breakfast smoothies is a blend of frozen banana and strawberries with yogurt, a touch of vanilla and honey, and lots of ice cubes.

Besides having a great taste, this green smoothie is based on wonderful fresh ingredients with health benefits. Cucumber and celery are diuretic veggies great for weight loss and high in minerals. Kale is a super vegetable packed with vitamin K and has anti-cancer benefits. Plus you can boost your immune system with cleansing lemon that’s full of vitamin C.  Pear is a great source of fiber and helpful for colon health.

H. Mango Frozen Bliss

If you like mangos like I do, you must try this luscious and creamy mango frozen smoothie. It is both refreshing and filling. You can use fresh or frozen mango chunks. If you start with fresh mango, cut in chunks and place on a parchment covered cookie sheet. Place in the freezer for 30 minutes along with a sliced banana. Use immediately or store in a freezer container.  The frozen banana and mango adds a creamy smoothness reminiscent of ice cream. Yum!

To support your immune system, I suggest  avoiding sugar and adding more cinnamon, turmeric, and ginger to your diet.  This early morning blended smoothie is a shot of vitamin C and all sorts of good things for your body with a wake up flavor.

L. Pineapple Blueberry Smoothie

Breakfast is a time we need to give our bodies fuel for the day after the night’s fast.  It’s also a busy time in most households.  Pineapple & Blueberry Smoothie is a quick smoothie filled with delicious goodness. Frozen pineapple and blueberries with milk, chia seeds, and a little ginger blend together to create a heavenly taste to wake you up.

M. Spinach Smoothie

This year I am reaffirming my goal to make a green smoothie daily. A green smoothie with baby spinach is my favorite.  The ingredients are simple and affordable: juice or almond milk, peanut butter, banana, mixed berries, chia and flax seeds and spinach.  It’s tasty and provides 3 full servings of fruits and veggies in the morning.

VI.  TOAST & WHOLE GRAIN BREAD

Toast is the ultimate comfort food – crispy bread topped with fresh ingredients. If you have a beautiful, whole grain bread you don’t want to toast, just load it up with your favorite toppings.  Jam, nut butters, yogurt, hummus, fruit, eggs, and avocado are just some examples of a hearty breakfast made super fast with bread or toast.

How about chopped green onions for a savory wake-up?

A. Yogurt Toast

Yogurt toast is the newest thing.  You can go savory with cucumbers, radishes, and fresh herbs.

Or you can go with fresh fruit, like sweet apples and dates.  This apple yogurt toast with dates is the perfect example of a simple yet delicious way to start the day. Use Greek yogurt and add a dab of honey and vanilla flavoring to plain Greek yogurt for a sweet vanilla flavor.

B. Lemony Avocado Toast

There are many variations of avocado toast.  Would you like some fresh fruit on top?

Avocado toast with  sliced tomatoes and a handful of spinach is topped with pickled red onions.

Perhaps you’d prefer your breakfast avocado toast to include scrambled eggs.

C. Strawberry & Cheese Bruschetta

Strawberry & Cheese Bruschetta is a delightful mix of sweet and savory  taste which is a perfect appetizer, snack, or breakfast.  Crusty bread with goat cheese topped with fresh strawberries and balsamic glaze is delicious any time  of the year but is perfect for a hot summer day.

D. Sweet Potato Toast

Another new breakfast trend is sweet potato toast.  No, there isn’t any real bread involved, but sweet potato toast has great flavor and nutrition.  Large sweet potato slices are cooked until tender, but not mushy, so that they are sturdy enough to hold your favorite toast toppings.  If you have a wide mouth toast or a toaster oven, your slices can be cooked without heating up the oven.   Now comes the fun part – adding your favorite toppings.

VII. YOGURT

 

Of course the easiest way to eat yogurt is plain out of the container. I love yogurt with honey (1 tablespoon per cup of yogurt), fresh fruit, nuts, seeds, and/or granola. You can’t go wrong with this breakfast or snack.  For fresh fruit, look for fruits of the season or the ever faithful banana or apple.   If you don’t make your own granola, look for one with whole organic grain and lower fat and sugar levels.

For a fun breakfast for kids and everyone else, slice an apple in half. Core it. Add yogurt, granola, and fruit. Voila! Yogurt Apple Bowls.

When it’s hot, I really don’t even want to think about turning on the stove.  How about a cold, fruity parfait for breakfast that can be made ahead of time?  One evening you can make parfaits for breakfast, lunch, or snacks and refrigerate them for up to 3 days.

In conclusion, easy summer breakfasts are as close as your bowl of fresh fruit, a slice of homemade zucchini bread or a muffin, some Greek yogurt,  the toaster, and all of your favorite toppings.  I hope I’ve inspired you to expand your options and try something new. Bon Appetit!

    Wow! Lots of tasty options for breakfast. I love smoothies in the morning and avocado on toast with eggs and spring onions/green onions is one of my favourite treats for breakfast. x

  2. Wow you collected a lot of great ideas here! I especially love the smoothie bowls… drinking something for a meal (a smoothie) just always leaves me hungry … I know it’s all in my mind, but apparently I need to chew something in order to feel satisfied, so drinking a smoothie I am just hungry again in an hour and end up eating more (and more calories). So the bowls might work. And I loved the various toasts too. (Don’t think I could sell the sweet potato one to my husband, I had to work pretty hard to get him to accept baked ones for dinner once in a while …I love them!). Thanks for all of these suggestions. Its hard to come up with new ideas for that first meal of the day.

  3. Thank goodness I just had breakfast, (Cheddar cheese and herb omelette by toast, shared with the SP) or I might just be heading to the kitchen to do some baking right now. We love blueberry muffins and I have a cocoa courgette (zucchini) muffin recipe I’m dying to try soon.

  4. What delicious ideas! My family really love blueberry muffins but I am not a fan of them. I prefer chocolate chip ones. hehehe I do love the sound of all of the smoothies. Yum! Yum! x

  5. Breakfast isone of my favorites. On Sundays we often do something elaborate, like a good scramble with loads of herbs and veggies and potatoes. Maybe (on special days) bacon or sausage. When the kids were little, Sunday was pancake day. During the week, it’s either fruit, some sort of quick bread or muffin, or cereal (granola in summer with yogurt; oatmeal in winter.) It’s a good start and if I don’t eat it till later, can hold me till dinner.

    1. I agree – I need something to get me going in the morning. I work better with a good breakfast and it can be almost anything.

  6. Haven’t baked in a while and am looking forward to get back in the routine of it. I also need to start buying avocados again. I could use it in so many ways. And we always love smoothies!
