Grilled Italian Basil Eggplant

This summer vegetable dish is perfect in its simplicity.  Brush eggplant rounds with olive oil, grill, and brush again with an olive oil and minced garlic mixture. Serve topped with chopped the fresh herbs, basil and parsley. It’s very easy and delicious.

Grilled Italian Basil Eggplant

An easy vegetable side dish of grilled eggplant with olive oil, garlic, basil, and parsley.

Ingredients

  • 1 large eggplant sliced into 1/2" rounds
  • 1/3 cup olive oil
  • 2 cloves garlic minced
  • salt and pepper to taste
  • 2 tbsp chopped fresh basil
  • 1 tbsp chopped fresh parsley

Instructions

  • Preheat grill to medium high heat
  • Lightly brush grill with oil
  • Brush eggplant with olive oil both sides
  • Mix remaining olive oil, salt, pepper, and garlic in small bowl
  • Arrange eggplant slices on grill
  • Cook 3 minutes per side until tender and browned
  • Arrange eggplant on platter
  • Brush eggplant with oil mixture and let sit 3 minutes to absorb oil
  • Sprinkle basil and parsley on top and serve
