Easy Greek Salad

We’re in the hot days of summer, and now is the perfect time for a cold salad full of ripe veggies.  Today’s recipe is easy Greek salad.  Traditionally Greek Salad has English cucumber slices, ripe tomato wedges, thin slices of red onion, Kalamata olives, green pepper, and Feta with a dressing made from extra-virgin olive oil and red wine vinegar or lemon juice and seasoned with a little dried oregano. Simple, easy, and delicious, Greek salad is great for lunch or dinner.  Classic Greek salad does not have lettuce, but it is a vegetable salad with all the flavor of summer.

Easy Greek Salad

Greek salad is a colorful low-fat veggie dish that's studded with salty olives and feta cheese.

Ingredients

  • 1 English cucumber sliced in half moons, peeled if desired
  • 4 medium tomatoes quartered
  • 1 small red onion thinly sliced
  • 1 large green pepper thinly sliced
  • 5 oz thinly sliced or crumbled Feta cheese
  • 1 cup Kalamata olives
  • 2 tbsp red wine vinegar or lemon juice
  • 3 to 4 tbsp extra-virgin olive oil
  • 1 tsp dried oregano

Instructions

  • In large bowl combine tomatoes, cucumber, green pepper, red onion, and olives
  • Mix olive oil, vinegar, and oregano in glass jar or container
  • Drizzle dressing over salad
  • Sprinkle salt over top
  • Toss lightly
  • Top with feta cheese
  • Optional serve w/o dressing and oil and vinegar to the side
  • Optional top with more olive oil and/or oregano as desired
  • Serve immediately or cover and refrigerate up to 2 days

  4. OMG, this is right up my alley. There’s a good gyro place down the street, but I usually order their Athens salad rather than a gyro and your recipe looks even better. Yum, thanks for this recipe.

  5. I almost have everything here at the lake to make this without going to the store. I might have to substitute vinegars and a red pepper for a green, but I can work with that. I adore Greek salad and this sounds terrific, Carol. Very refreshing, too.
