Avocado Breakfast Sandwich

This breakfast sandwich is quick, easy and delicious. Cheesey eggs with avocado and tomato slices  sit on slices of Italian bread.  What a great way to start the morning.

The sliced avocado is what makes this sandwich pop and gives it a unique flavor. It is chock-full of protein, as well, so this sandwich will keep you full until lunchtime.  The eggs and cheese make a classic omelet which is layered on Italian bread (or bread of your choice) with tomato slice, avocado slice, and a little microgreens.  Yum – I’m hungry just writing this post.

Avocado Breakfast Sandwich

A hearty sandwich of egg omelet with avocado, tomato, and microgreens. Great for breakfast and lunch

Ingredients

  • 1 tbs olive oil
  • 2 large eggs
  • 1 oz Cheddar cheese grated
  • 1 oz Swiss cheese grated
  • salt and pepper to taste
  • 2 slices Italian or whole grain bread
  • 1/2 sliced avocado
  • 1 slice ripe tomato
  • 1 handful of fresh microgreens
  • 1 tbsp mayonnaise or aioli sauce

Instructions

  • Apply mayo to one side of each piece of bread
  • Place eggs in bowl
  • With fork beat eggs about 25 times without making it fluffy
  • Add salt and pepper to taste
  • Heat frying pan with olive oil on medium
  • When oil is hot, pour in eggs
  • Cook until egg is set around edges about 25 to 30 seconds
  • Using spatula, carefully push cooked egg from side of skillet toward center,
  • Repeat around pan about 8 times tilting as necessary
  • Cook until omelet is almost set but still creamy and moist on top
  • Sprinkle cheese on half of omelet
  • With spatula, fold unfilled half over filling
  • Shake pan gently to loosen any egg or filling from edge
  • Slide omelette onto bread slice
  • Add tomato slice and avocado slices
  • Top with a handful of fresh microgreens
  • Top with second slice of bread
  • Half sandwich on diagonal to serve
