Tuna Stuffed Avocado

Tuna Stuffed Avocado is a terrific starter or lunch. I’m using pouches of tuna as pouch processing requires a shorter cooking time, which leaves the texture of tuna firmer, and results in a fresher-tasting product. You can use canned tuna too.  The tuna salad is not the classic one I’ve enjoyed since childhood, but it is full of flavor. Quick and easy to make with a few great ingredients, you’ll find you will use it many times for a spur of the moment healthy meal.

As always, you can adapt the tuna salad to fit your family’s preferences.  Options and variations include serving tuna salad on lettuce with the avocado cut in pieces and added around the tuna mound or mixing avocado chunks into the tuna salad. Save some of the green onion and red pepper for garnish if desired.

Tuna Stuffed Avocado

Tuna Stuffed Avocado is quick and easy to make with a few great ingredients. The dish goes best with crisp white wines and crunchy bread. This recipe is great for experimenting with a variety of different vegetables, spices, and vinegars.
Course Salad

Servings 2 servings

Ingredients

Salad

  • 2 pouches albacore wild tuna 3 oz per pouch
  • 2 Haas avocados halved and seeded
  • ¼  cup diced red bell pepper chop by hand
  • 2 sliced green onions

Dressing

  • 1 teaspoon lemon juice
  • 1 teaspoon red wine vinegar or balsamic vinegar
  • 1 tbsp mayonnaise
  • 1/4 teaspoon dried dill
  • 1/8 teaspoon salt
  • 1 dash pepper
  • 2 tbsp minced fresh cilantro

Instructions

  • In medium bowl, combine dressing ingredients.
  • Reserve some pepper and green onions for garnish.
  • Add in tuna, green onion, and red bell pepper to dressing.
  • Mix until well coated and combined
  • Scoop tuna salad on top of each avocado half.
  • Garnish with pepper and green onion.
  • Optional serve tuna on lettuce with avocado chunks surrounding tuna mound
  • Optional cut up avocado and mix in salad
  • Serve immediately

  1. What a clever and healthy idea, Carol. I will put avocados on Rick’s shopping list for this week (if they still have them; we’re having a little trouble getting fresh produce.) But I have everything else! I love every ingredient!

    1. Yes the fresh veggies are a big part of my life. I went to Winn Dixie Saturday looking for fresh carrots – I put them in everything. Anyway, there weren’t a lot of people there and I enjoyed walking up and down aisles while trying to stay away from folks.
