Taco Salad

Today’s recipe is for a tasty taco salad that’s a one dish meal.  This is a quick recipe which is great for busy week nights, and it can be modified in so many ways. You can use lean ground beef, turkey, or chicken for the meat. You can also used leftover shredded pork or beef. If you’re a fan of summer grilling, try grilled chicken or steak strips on your bed of lettuce. You can even buy a rotisserie chicken and shred the meat. I have used black bean, pinto beans or kidney beans. There are so many wonderful variations to meet your taste needs or adjust for items in  your pantry. Have a vegetarian or vegan in your family or need a meatless meal?  Add sliced avocado, fresh corn, and skip the meat for a meatless entree.

 

 

 

 

 

 

Check out my thrifty taco seasoning recipe . I know the bottles at the store save time, but check labels to avoid sugar. It’s not hard to make your own if you have a little time, though. It’s easy to make ahead, saves money,  and can be adjusted to fit your needs. It makes a great gift too!

 

 

 

 

This simple and wholesome taco salad will become your go-to weeknight meal. Featuring ground turkey, tomatoes, kidney beans and Mexican spices, this filling is a perfect addition to tortilla chips, warmed tortillas or a chip bowl. Top with sour cream, guacamole or salsa and serve immediately. For the cheese, I prefer either Monterrey Jack or a good cheddar.  If you need to get more veggies in the children, roast some corn and add it to the mixture. Serve in edible tortilla bowl or on a bed of salad greens topped with any or all of the following condiments tortilla chips, grated cheese, chopped green onions, diced fresh tomato, sour cream, chopped fresh cilantro. Finish with a generous serving of salsa or even guacamole.

Taco Salad

Ingredients

  • 1 lb lean ground turkey (or beef, pork, chicken, steak)
  • 1 tsp olive oil
  • 1 can 15 oz can of chopped tomatoes in sauce
  • 2 tbsp taco seasoninge
  • 1 can 15 oz can of drained kidney beans
  • 2 cups lettuce ( Romaine works well)  
  • 2 chopped tomatoes or halved grape tomatoes
  • 3/4 cup shredded cheese
  • 1/2 cup chopped green onions
  • 1 optional medium avocado cubed
  • optional tortilla bowl or tortilla chips
  • optional 1/4 cup fresh torn cilantro
  • 1/3 cup salsa
  • 1/3 cup sour cream
  • 1/3 cup optional guacamole

Instructions

  •  In skillet, brown ground turkey in the oil over medium heat 
  • Stir breaking up the pieces with a spatula for about 6 to 8 minutes
  • Add beans, canned tomatoes, and taco seasoning
  • Cook for 7-10 minutes until heated through and moisture decreases
  • Remove from heat
  • Assemble salad with either a bowl of lettuce or a tortilla bowl as base
  • Add tomatoes, green onions, cilantro, and top with cheese
  • Serve with sour cream, salsa, and/or guacamole, and tortilla chips
