When it’s hot, I really enjoy having a cold, frosty liquid breakfast like a great smoothie. Today we’re using two super foods, blueberries and pomegranate, to get lots of heart healthy antioxidants with a great taste. Add some Greek yogurt, milk, oats, honey, and cinnamon and you’re revved up the taste as well as the nutritional value of your drink.
You can use fresh or frozen blueberries for great taste and health benefits. I find frozen berries makes the smoothie a little more a frozen slushie which I really like. The Greek yogurt and milk add protein and calcium so you really are getting a great drink to start your day. This recipe makes 2 smoothies; put the second in a covered bottle or jar in the fridge for a snack in the afternoon. Give it a shake or two and your snack is good to go.
Blueberry Pomegranate Smoothie
Use organic when available, makes 2 servings
Blueberry Pomegranate Smoothie
Ingredients
- 1 cup blueberries
- 3/4 cup pomegranate juice
- 1/2 cup low-fat Greek yogurt
- 1/2 cup skim milk or milk of choice
- 1/2 cup rolled oats
- 1 tbsp honey
- 1 tsp ground cinnamon
Instructions
- Combine all ingredients in a blender or food processor
- Cover and blend until smooth, about 2 minutes
- Garnish with berries, optional
- Serve cold

We spent a couple mornings last week picking blueberries at our daughter’s. Their berry bushes are so generous!
We make something similar but I think the addition of pomegranate juice would make it even better. I will give it a try.

Yum! This morning I made an apricot, banana, and walnut smoothie which the Husband enjoyed. It looks like we’ll be expanding our breakfast repertoire. We’ve got blueberries in the freezer. Guess what recipe I’ll be trying next? 🙂
