Summer is almost here and that means lots of beautiful, fresh fruit. Many of us eat fruit daily, like an apple or banana for dessert. Most of us do not eat enough fresh fruits and vegetables a day. To promote your health, eat a variety of fruits and vegetables—at least 2 servings of fruits and 3 servings of vegetables—each day.
For the next 3 to 4 months, a variety of fruits are in season and are perfect for cookouts and barbecues. You get a wider variety of nutrients by eating more kinds of fruits. Those nutrients actually work together to produce even more powerful health benefits than any single fruit could alone. A simple fruit salad is the easiest way to present fruit to feed a group and increase the health benefits too. For patriotic holidays, a simple dish of red and blue fruit like strawberries or watermelon with blue berries or black berries are very popular. Add bananas and you have red, white, and blue. Easy Peasy.
Today’s recipe uses lots of our favorite fruits: strawberries, pineapple, banana, blue berries, and black berries. I’m really fond of berries. If raspberries are in season, toss them in. If you can find some Mandarin oranges, add them too. You can vary the type of fruit by season. If peaches or nectarines are in season substitute them. This is a great basic recipe that can be changed according to what’s available in your area. Grapes are also another great tasty addition. If you use grapes with seeds, cut in half and remove seeds. Your salad can be the same or different each time you make it.

Use organic when available, Serves 10
Summer Fruit Salad With Honey Lime Dressing
Ingredients
Salad
- 2 cups cubed fresh pineapple
- 3 bananas sliced
- 6 oz blackberries
- 2 cups blueberries
- 3 cups strawberries hulled and sliced
- 3 Kiwi fruit peeled and sliced
- 1 cup seedless grapes
- 3 Mandarin oranges peeled and sectioned (or peach slices)
- Fruit of choice like raspberries, nectarines
Honey Lime Dressing
- 1/4 cup local honey
- 2 tsp fresh lime zest
- 3 tbsp fresh lime juice
Instructions
- Mix all fruit in a large bowl
- In a separate bowl, whisk together honey, lime juice and lime zest
- Pour dressing over fruit
- Mix well to coat fruit
- Serve in one large bowl or individual cups
- Decorate top of salad with fruit optional
Enjoy a bowl of rainbow-goodness and delight your taste buds with a great taste and balance of sweetness and tanginess!
