Sugar Cookie Fruit Pizzas To Celebrate

We’re starting a season of happy celebrations and fresh fruit. Next Sunday is Easter, then next month we celebrate Mothers, Memorial Day, and follow-up with the June holiday of Father’s Day and  last 4th of July. Oh the luscious food we’ll eat! I love serving fresh fruit during these warm months; I am always looking for simple treats to share with my friends.

Sugar Cookie Fruit Pizzas

Use organic when available. Servings depend on cookie recipe used. Icing and fruit for 24 to 30 cookies.

Mini Sugar Cookie Fruit Pizzas

Soft and chewy sugar cookies are topped with a rich cream cheese frosting then decorated with colorful fresh fruit.  A great summer treat of cookies and fruit as small fruit pizzas.

Ingredients

  • Sugar Cookies – either homemade sugar cookies from scratch, store-bought cookies, or  commercial refrigerated sugar cookie dough
  • 2 cups sliced fresh strawberries
  • 2 oranges sectioned
  • 1 cup berries or fruit of choice
  • If using bananas, dip banana slices in lemon juice
  • 8 oz package of cream cheese
  • 1 cup powdered sugar
  • 1 tsp real vanilla extract

Instructions

  • Bake sugar cookies and let cool completely
  • Beat together cream cheese, powdered sugar and vanilla until smooth
  • Spread cream cheese mix over cooled cookies
  • Chill until ready to decorate
  • Arrange strawberries in pattern starting at outer edge
  • Layer fruit in circle forming petals
  • Add berries, orange slices for center of flowers
  • Serve on a platter or on individual dishes
  • Optional: set up fruit bar with platter of iced cookies for guests to choose fruit and decorate

  1. Those are so pretty! I’m hoping time will open up for me to make cookies for Easter. It’s not as available as it has been in the past, what with being with Rick. But I’d love to make these — they’re so pretty!

  2. HI Carol, these do look like fun and fruity pizzas. I’ll have to give your cream cheese icing a go as I do like a nice cream cheese icing, but like you I prefer it not too sweet.
