Spiced Whole Roasted Cauliflower

This easy to make dish is so tasty that even meat lovers will enjoy it!  A great side dish or an entrée for a meatless meal, this marinated dish has great spicy flavor.  Adjust the spices for your family’s taste to make it stronger or milder.

The marinade of spices and Greek yogurt is the key to the wonderful taste. It’s thick and easy to spread onto your whole cauliflower.  If you’d like the spices inside the cauliflower, turn it upside down first and pour a little marinade into head and let it run between florets. Bake for a great roasted flavor. You can serve it as a side dish or as the main event with more roasted vegetables like potatoes and carrots. For a salad, place roasted head on a platter and surround with your favorite salad components like cucumbers, tomatoes, peppers, and lettuce.

 

 

 

 

 

Spiced Whole Roasted Cauliflower

Spiced Whole Roasted Cauliflower

Ingredients

  • 1 whole cauliflower head: 1 1/2 to 2 lb.
  • 1 1/2 cups plain Greek yogurt
  • 1 lime
  • 1 tbsp chili powder
  • 2 tsp cumin
  • 2 pressed cloves garlic
  • 1 tsp curry powder
  • salt and pepper to taste

Instructions

  • Zest half of washed lime 
  • Juice lime
  • Preheat oven to 400 degrees F
  • Wash cauliflower and remove green leaves
  • Pat cauliflower dry
  • Line baking dish with parchment paper
  • Combine all ingredients other than cauliflower including lime juice and zest
  • Turn cauliflower upside down and pour 2 tablespoons marinade into cauliflower optional
  • Turn over and rub marinade all over top or use brush
  • Place in parchment paper lined pan
  • Touch up any bare spots with marinade
  • Roast in oven
  • After 10 minutes examine and add more marinade if necessary
  • Repeat if necessary
  • Cook about 20 to 30 minutes more or until dry and brown all over
  • Remove and cool 10 minutes
  • Optional place on platter surrounded by more roasted vegetables
  • Optional serve on platter with lettuce as salad entrée
  • Optionl add 2 tablespoons apple cider vinegar & 1 tablespoon honey to left over marinade & mix for dressing
  • Optional cut cauliflower into wedges and serve with dressing spooned over cauliflowe

  1. Hi Carol, I do add cauliflower when roast mixed veg, but would never have thought to roast a whole head. The marinade sounds tasty and Greek yogurt is something we do haveplenty of in the fridge.

    1. It is tasty – cauliflower is kind of bland which makes it great to add to all kinds of herbs and spices.
