Delicious Smoothie With Pineapple & Blueberries

Breakfast is a time we need to give our bodies fuel for the day after the night’s fast.  It’s also a busy time in most households.  Today’s recipe is a quick smoothie filled with delicious goodness. Frozen pineapple and blueberries with milk, chia seeds, and a little ginger blend together to create a heavenly taste to wake you up. If you need more protein, add a scoop of protein powder. Make it your own!

Pineapple, a delicious tropical fruit, has been celebrated for centuries not only for its unique taste but also for its miraculous health benefits. The health and medicinal benefits of pineapple include boosting the immune system, and respiratory health, aiding digestion, strengthening bones, reducing inflammation, curing coughs and colds, and weight loss. Fiber, potassium, folate, vitamin C, vitamin B6, and phytonutrient content in blueberries support heart health while chia seeds are a good source of omega-3 fatty acids, fiber, antioxidants, iron, and calcium. Together with a few tasty and healthy additions is the perfect delicious breakfast smoothie filled with goodness which is also great at lunch or snack time.

Use organic when available. Serves 1

Pineapple Blueberry Smoothie

A delicious fruity smoothie for breakfast or a snack.

Ingredients

  • 1 cup coconut water
  • 1 cup non-dairy milk i.e. almond or coconut
  • 1 cup frozen pineapple chunks
  • 3/4 cup frozen blueberries
  • 1 tbsp chia seed
  • 1 tbsp finely chopped fresh ginger root

Instructions

  •  Place all ingredients in a blender or food processor
  • Blend until smooth
  • Serve immediately

    1. I’m so sorry to hear that. I have IBS too but pineapple doesn’t upset my tummy. It has digestive enzymes in it.

  1. I like and eat those fruits often and with relish… but I have to confess that smoothies just make me hungrier. I have tried so many times , but there is apparently something in my genes (or all in my head more probably) that says I must chew in order to know I’ve been fed. My happy healthful breakfast would be the slice of pineapple with yogurt and blueberries on top. Maybe a quarter cup of grain-free granola.

  2. This is almost the exact same recipe that I use for my daughter’s smoothies! (Except for the ginger, which she’s not a fan of, and we do add a bit of protein powder.) She asks for one most afternoons. 🙂 Thanks for sharing at Sweet Inspiration!
