I love all parts of a chicken. Each part has its own great flavor. Do you like chicken legs? I think they are very tasty and like finding new ways to cook them. You could use other chicken parts for this recipe: thighs, wings, and breasts. I know they would taste great with the wonderful sauce of tomato, oranges, onions, and peppers.
You know I also love one pan meals, and this recipe comes pretty close. Cook rice, pasta, or even mashed potatoes to serve with the chicken, veggies, and sauce.
Roast Orange Chicken with Peppers
Use organic when available, serves 4
Ingredients
- 2 lb. chicken legs or thighs ( about 8)
- 1 orange thinly sliced
- 1 onion diced
- 3 garlic cloves minced
- 1 red pepper seeded and thinly sliced
- 1 yellow pepper seeded and thinly sliced
- 1 cup orange juice
- 1 teaspoon smoked paprika
- 1 28-oz. can diced tomatoes
- 1 tablespoon orange zest
- 1 large zucchini sliced
- 1 large yellow squash sliced
- 1 carrot sliced
- 1 1/2 teaspoon salt
- 1 teaspoon black pepper
- 2 tablespoons olive oil
- 1/4 cup honey
- 1/4 cup fresh parsley chopped
Directions
- Preheat oven to 400 degrees F
- Sprinkle salt and pepper on chicken
- In large bowl mix orange juice, paprika, honey, parsley, tomatoes, olive oil, garlic, and orange zest
- Place chicken in a shallow dish with a lid or a zip-lock bag
- Pour marinade over chicken, cover, and put in refrigerator for at least 30 minutes up to 3 hours
- Turn at least once
- Remove chicken from marinade and save marinade
- Place peppers, onions, carrot, zucchini, and yellow squash in single layer in bottom of large baking pan or dish
- Place chicken on the veggies and orange slices over chicken pieces
- Pour marinade over chicken and veggies
- Bake chicken for 30 to 40 minutes until done basting periodically with marinade
- Optional turn on broiler and brown chicken for 3 to 5 minutes
- Serve with pasta, mashed potatoes, or rice

Carol we make chicken all the time in my house but lately we have gotten tired of the same thing. This is such a cool recipe with ingredients I normally would not use for chicken. It’s time o shake things up and give it a try.
