Easy Cast Iron Skillet Fruit Cobbler

I know what you’re thinking. Summer is over and we’re deep in winter;  now she’s sharing a fruit cobbler. The good news is this dish can be made with fresh or frozen fruit. On a cold winter night, you can make a sweet treat with a frozen mix of fruit. Prefer blueberries? Make a blueberry cobbler.  Have a family member who goes gaga over blackberries? Make a blackberry cobbler.  I like making a mix of fruit often including peaches, multiple berries of course, and anything else that strikes my fancy. In the summer use any juicy summer fruit: peaches, nectarines, blueberries, blackberries, strawberries, raspberries.

Use your 12″ cast iron skillet for an easy bake sweet treat. Don’t have a large oven-proof skillet? Use a glass oven-ware dish.  Don’t store your leftovers in the cast iron skillet.  It will pick up a metal flavor. So remove any leftovers from the skillet before putting it in the refrigerator.

Use organic when available. Cobbler fills 12″ inch cast iron skillet and serves 5 to 6 servings.

Cast Iron Skillet Fruit Cobbler

The good news is this dish can be made with fresh or frozen fruit. On a cold winter night, you can make a sweet treat with a frozen mix of fruit in a 12" cast iron skillet.

Ingredients

  • 1 1/2 cups whole grain flour
  • 1 cup sugar
  • 3 tbsp raw honey
  • 1/2 tsp salt
  • 2 1/2 tsp baking powder
  • 1 1/2 cups milk
  • 1/4 cup butter (1/2 stick)
  • 3 cups fresh or frozen fruit (cut large pieces into bite-sized pieces)
  • Juice of one lemon 

Instructions

  • Preheat oven to 350 F
  • In 12" cast iron skillet heat 1 1/2 cups berries, honey, and lemon juice over medium heat
  • Stir & cook for about 10 minutes
  • Fruit should become thick compote
  • Pour fruit into bowl and add rest of fruit
  • Let cool slightly
  • Put butter in now empty skillet and let melt
  • In separate bowl whisk flour, baking powder, sugar, and salt
  • Add milk and stir until no lumps
  •  Mix flour mixture into butter in skillet
  • Stir to mix completely
  • Drop spoonfuls of fruit mixture onto flour mixture
  • Do not stir
  • Scatter evenly to distribute fruit on flour mix
  • Put in oven for 35 to 40 minutes until batter browns and fruit bubbles
  • If edges start to darken, cover with aluminum foil
  • Remove from oven and cool 10 minutes
  • Serve, optional: whipped cream or ice cream

  1. Oh you’re killing me, Carol. I was thinking what kind of bar I wanted to make and blueberry and lemon were at the top of the list. I have got to get another cast iron skillet and am sorry I gave my grampa’s old one away (cleaning was a hassle). Good looking recipe, I like that you can use frozen fruit.

    1. Use a glass ovenware to make it – you’d have to change the directions a little but it would work! Happy New Year!
