A wonderful winter side dish that is perfect for your evening meal or a holiday dinner – Squash Cranberry Saute. Cook cubes of butternut squash with fruit-juice sweetened dried cranberries. Yum!
I’m starting with cubed organic butternut squash in Aldi’s frozen foods You can use fresh squash peeled and cubed – about a small-sized squash equals about a little more than the 10 oz. bags of cubed squash. Cranberries will be in the market for the next month if you’d like to use fresh cooked cranberries. I’m using fruit-juiced sweetened dried cranberries, as they are readily available year round. This tasty side can be made all winter even into spring.
Squash Cranberry Saute
Use organic when available, 4 servings
Squash Cranberry Saute
Ingredients
- 1 1/2 cups chicken stock
- 10 to 12 cubed butternut (small butternut squash)
- 1/2 small red onion sliced
- 3 tbsp fruit-juice sweetened dried cranberries
- 1 tbs[ butter or margarine
- 2 tbsp olive oil
- 1 tbsp Agave nectar, honey, or maple syrup
- Salt to taste
- Optional 2 tablespoons almond or, Parmesan cheese for garnish
Instructions
- Place squash, chicken stock, cranberries, and onion in a pot over medium-high heat
- Bring to a boil and lower heat to low and simmer about 15 minutes
- Squash should be tender - drain
- Melt butter and oil in pan on medium heat
- Add squash mix with sweetener
- Stir gently to mix sweetener
- Brown vegetables on both sides
- Salt to taste
- Garnish with almonds and cheese if desired
- Serve hot

Sounds so good Carol. When I used to cook Thanksgiving feasts I enjoyed trying new vegetable side dishes to go with the traditional entree….this owuld have been perfect! Now I think I’ll try it for just two on an ordinary day. (Because the younger generations pretty much just invite us over these days — thankfully!)
