Apple Cucumber Green Smoothie

Autumn is a great time to try new apple recipes.  A wonderful way to start the day is with a vibrant apple green smoothie packed with vitamins and minerals.  Today let’s talk about an apple cucumber smoothie with spinach, ginger and local honey. Yum!

This baby will feed your body with more than the daily need of vitamins K and A and more than half of the daily need of manganese and folate. This smoothie is also rich in fiber, magnesium, iron, vitamins C and E, B vitamins, calcium and potassium.  All of this with a great wake-up taste.

Remember to use raw local honey and not the fake stuff sold in some supermarkets.  It has great taste and has healthy benefits too. Just read the labels. Pure honey doesn’t need additives. For vegan, replace honey with agave nectar or maple syrup.

Apple Cucumber Smoothie

A wonderful way to start the day is with a vibrant apple cucumber green smoothie packed with vitamins and minerals.

Ingredients

  • 1 cup packed baby spinach
  • 1 apple cored & diced
  • 1/2 large cucumber or 1 small cucumber
  • 1/4 cup fresh mint leaves
  • 1 tbsp local raw honey or agave nectar
  • 1/2 Haas avocado peeled & seed removed
  • Juice of 1/2 lemon
  • 1 tbsp minced ginger
  • 1/2 cup filtered water
  • 3 ice cubes

Instructions

  • Peel at least 60 % of cucumber  & slice it into quarters lengthwise
  • Cut seeds off edge
  • Place in blender with water & all ingredients except ice
  • Blend to combine
  • Add ice & blend until smooth & thick
  • Taste and add more honey if needed
  • Serve immediately

  1. Smoothies always have seemed like a wonderful idea and yours looks scrumptious — but I have problems with them because they leave me hungry … they go down too smoothly (ha) …. and I don’t feel like I’ve eaten. I need something to chew i guess.
