Cilantro Lime Chicken with Avocado Salsa

It’s grilling time with marinated cilantro lime chicken. To jazz it up, I’m using Avocado Salsa as a topper. Yum! Creamy avocado, onions, and chili pepper make a great summertime salsa. Use as a topper for grilled fish or chicken, or just dip tortilla chips in it.  The longer the chicken can marinate, the better it is.

Summer is a time for grilling and easy fixings.  This chicken is tasty by itself but is even better with a little salsa.

Cilantro Lime Chicken With Avocado Salsa

A tasty main dish with the wonderful tropical flavors of ilantrol and lime. Serve with spicy avocado salsa. Use organic when available.

Ingredients

Ingredients For The Chicken 

  • 1/4 cup lime juice
  • 2 tbsp olive oil
  • 1 clove garlic
  • 1/2 cup chopped fresh cilantro
  • Salt and pepper, to taste
  • 4 boneless, skinless chicken breast halves

Ingredients for Avocado Salsa

  • 2 avocados, peeled, seeded, & diced
  • 1 cup sliced cherry tomatoes
  • 1/4 cup finely chopped sweet onion
  • 1/2 cup chopped fresh cilantro
  • 3 tbsp lime juice
  • 1/2 tbps red wine vinegar
  • 1/2 tsp chili flakes
  • 1 clove garlic, minced
  • Salt and pepper to taste

Instructions

  • In a small bowl, combine lime juice, olive oil, garlic, cilantro, salt and pepper.
  • Place the chicken in a large plastic bag. Add the marinade. Let the chicken marinate for at least 20 minutes.
  • Preheat a grill pan over medium-high heat. Spray with non-stick oil.
  • Place the chicken in the pan and cook for 5 to 6 minutes per side, or until chicken is cooked all the way through. Once cooked, remove the chicken from the pan and set aside.
  • To make the avocado salsa, add all of the ingredients to a large bowl. Toss gently to mix.
  • Top cilantro lime chicken with fresh avocado salsa and serve with rice.
  • Serve with pure and refreshing sparkling water with fresh lime.

  3. Hi Carol, this sounds really nice for a change. In the summer I keep cooking to a basic minimum, favouring salads and light pasta dishes, but this sounds good. Avos are in season at the moment and I’ve seen limes. I’d like to give tis recipe a try.
