What’s In My Kitchen, Cucumber Tomato Salad

Today I’ll share a few ideas from my kitchen. I’ve been devouring fresh vegetables and fruit for the last few months.  I’ve made Green Bean Potato Salad so many times I’ve lost count.

 

 

 

 

Avocado Strawberry Salad is also one of my favorites.

 

 

 

I’ve been making lots of Avocado BLT‘s – I’m so glad I discovered that chicken bacon!

 

 

 

 

When I want something hot for dinner, I usually go with a stir-fry.  One evening I used fresh squash and green beans with oil and herbs. I added cooked chicken breast at the end with a sauce of low-sodium soy sauce, chicken broth, a little honey and vinegar.  It was tasty!

Dessert can be a simple piece of fruit. If I have fresh strawberries, I just add a little whip cream or balsamic vinegar. Yum!

 

 

 

 

 

 

There is nothing in the world as good as fresh tomatoes and cucumbers. We eat them alone and in salads. Sliced tomato sandwiches with mayo….there are so many simple good ideas out there.  Sometimes I just want a simple and fast bowl of cucumber and tomatoes with herbs and vinaigrette for lunch. Not really much of a recipe either. This time I used balsamic vinegar but apple cider vinegar is also good.

 

 

 

 

 

Cucumber Tomato Salad

Use organic when available

Cucumber Tomato Salad

Course Appetizer, Salad
Cuisine American

Ingredients

  • 2 large or 3 medium cucumbers sliced
  • 1 container baby tomatoes
  • 5 fresh basil leaves diced
  • 1/2 cup olive oil (or oil of your choice)
  • 1/4 cup balsamic vinegar or apple cider vinegar
  • 1 tbsp lemon juice
  • 1 tsp sugar
  • salt and pepper to taste
  • Optional 1/2 onion sliced

Instructions

  • Cut baby tomatoes in half or if tiny use whole
  • Place in mixing bowl
  • Peel and slice cucumbers
  • Add to bowl
  • Dice basil leaves
  • Add to tomatoes and cucumbers
  • Optional add sliced onion if using
  • Mix oil, vinegar, lemon juice, salt and pepper to taste in separate bowl
  • Drizzle dressing over vegetables
  • Toss to coat
  • Optional top with fresh shaved cheese
  • Serve immediately
