An easy meal without the oven, Grilled Chicken Tacos are fast and delicious without heating up the kitchen. They’re perfect any time of the year but especially in the heat of the summer.
Take boneless, skinless chicken thighs, marinade in some spices with onion and garlic, and grill your way to a fast meal. Top with your favorites or try a new spin. Shredded purple cabbage is a great substitute for lettuce. Tired of plain old salsa? Make mango salsa. Or try it with pineapple! It is easy to customize this to fit most palates and diets. It can be served with either corn or flour tortillas or on a salad for a grain-free version.

Sounds good! My kids like tacos with ground beef – they may enjoy this too! I love the idea of not using the oven when it’s hot out. You could even pan fry the chicken if the weather isn’t cooperative for a BBQ. Thanks for sharing Carol.
