Easy Grilled Chicken Tacos For A Summer Meal

An easy meal without the oven, Grilled Chicken Tacos are fast and delicious without heating up the kitchen. They’re perfect any time of the year but especially in the heat of the summer.

Take boneless, skinless chicken thighs, marinade in some spices with onion and garlic, and grill your way to a fast meal. Top with your favorites or try a new spin.  Shredded purple cabbage is a great substitute for lettuce.  Tired of plain old salsa? Make mango salsa. Or try it with pineapple! It is easy to customize this to fit most palates and diets.  It can be served with either corn or flour tortillas or on a salad for a grain-free version.

 

Easy Chicken Taco Dinner

 

Ingredients

  • 1 lb. boneless skinless chicken thighs
  • 1/4 cup fresh lime juice
  • 2 tablespoons olive oil
  • 2 garlic cloves finely chopped
  • 2 teaspoons ground cumin
  • 1 1/4 teaspoon chili powder
  • 1/4 cup chopped fresh cilantro
  • Salt & freshly ground pepper to taste
  • Corn or flour tortillas

 

Toppings

  • Shredded red cabbage or lettuce
  • Avocado slices
  • Diced tomatoes
  • Sliced cucumbers
  • Sour cream
  • Guacamole
  • Pico de gallo
  • Hot sauce
  • Salsa
  • Olives
  • Radishes
  • Limes
  • Fresh chopped cilantro
  • Grated cheese

 

 

Taco toppings

Directions

  1. Mix all ingredients except chicken in bowl
  2. Place chicken in container with lid and pour marinade over it
  3. Stir to coat & cover
  4. Refrigerate at least an hour up to 5 hours
  5. Preheat grill to medium high heat
  6. Remove chicken from marinade
  7. Grill chicken about 4 minutes each side until cooked
  8. Cover and let rest 5 minutes
  9. Dice or shred chicken in to small pieces or strips
  10. Serve with tortillas and toppings

  3. Sounds good! My kids like tacos with ground beef – they may enjoy this too! I love the idea of not using the oven when it’s hot out. You could even pan fry the chicken if the weather isn’t cooperative for a BBQ. Thanks for sharing Carol.
