Savory Salad with Grilled Asparagus

Asparagus, fresh and green, means spring to me. I’m always happy when I see spring asparagus in the market.  Today’s treat is an asparagus salad with a lemon vinaigrette.  Start with the freshest asparagus you can find.  Grill after tossing with a little olive oil and salt and pepper. Add spring baby lettuce, tomatoes, a little cheese, and even mushrooms if you’re in the mood.

Use organic when available.  Serves 4

Savory Salad With Grilled Asparagus

Savory Salad is an asparagus salad with a lemon vinaigrette
Course Brunch, lunch, Salad

Ingredients

  • 1 lb asparagus
  • salt and freshly ground pepper
  • 1 tbsp finely chopped fresh basil or 2 teaspoons dried
  • 1 garlic clove minced
  • 3 tbsp olive oil
  • 4 cups mixed organic greens (such as arugula, baby greens, baby spinach)
  • 1/2 cup halved cherry tomatoesl
  • 1/2 cup (4 ounces) Feta or goat cheese crumbles
  • 1/4 cup 1/4 cup olive oil plus 3 tablespoons
  • 1 lemon, juiced (about 2 to 3 tablespoons)
  • 1 cup white mushrooms, sliced optional

Instructions

  • Heat the grill
  • Cut any white ends off the asparagus and discard to compost bin 
  • Toss asparagus & mushrooms (optional) in shallow dish with 3 tablespoons olive oil & salt & pepper
  • Place asparagus on hot grill (mushrooms optional)
  • Flip vegetables once after 3 minutes
  • Cook for 3 more minutes
  • Remove vegetables from grill & allow to cool
  • When cool enough to handle, cut asparagus into one-inch pieces
  • In a large bowl, toss greens, cheese, grilled asparagus, tomatoes & mushrooms
  • In small bowl whisk basil, 1/4 cup olive oil, garlic, lemon juice & salt
  • Pour dressing over the salad and serve
