Citrus-Berry Baby Greens Salad

It’s time for another great salad:  baby greens, orange sections, fresh strawberries and blueberries topped with nuts. I’ve made a few arugula salads since fall and this salad was originally made with baby arugula. It works well with arugula (below) or a mix of baby greens with a simple lemon juice and extra virgin olive oil dressing.

 

 

 

 

 

Today’s version I’m using an organic baby greens mix from Aldi with spinach, chard, kale, and arugula.  A lovely blend of flavors topped with fresh fruit in season.  Yes, Florida strawberries are in season. I buy Wish Farms Organic Strawberries. In the winter the label says Florida grown. By April, the packages will say California grown.  It’s too cold in California right now for strawberries. Well, with the terrible weather we’ve had this winter, it’s a miracle we have Florida strawberries.  I had 2 nights down to freezing and temperatures have been 10 degrees below average for a week.  I’m tired of soup everyday and ready for a great salad. Citrus-Berry Mixed Greens Salad

Use organic when available. Serves 6

Citrus-Berry Mixed Greens Salad

A lush salad with fresh orange slices, strawberry slices and nuts on a mixed green bed.

Ingredients

  • 2 boxes (5 oz.) organic baby salad mix or arugula
  • 1 dz strawberries (halved if large)
  • 1 cup orange sections
  • 1 cup blueberries
  • 8 oz cheese (mozzarella or  goat cheese, crumbled)
  • 2 cups roasted nuts: walnuts, cashews, pecans, almonds, or seeds
  • 1 lemon, juiced
  • 1 to 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  • Mix greens, lemon juice, olive oil, salt & pepper in bowl
  • Place on serving platter
  • Add berries, citrus, and nuts
  • Add cheese
  • Serve chilled

  1. As it’s mid winter here we find it harder to find good quality berries sourced locally. When we read the label we seee they come from many miles away and subsequently are either picked too early to allow for travel or are already “on the way out”. Hope you have better luck where you live

    1. Strawberries are in season here in Florida as well as the citrus. By April it’s hot summer weather and we can’t grow strawberries. Then they come from California.

    1. Can you get frozen blueberries? I’ve defrosted and used those before. Not frozen strawberries – just the blueberries.
