Recently I was making my salad for lunch and remembered I had bought mangoes and some kiwi. I simply peeled and sliced both and added to my mixed greens and grape tomatoes. I believe in being adventurous and trying new combinations in salads. Makes it healthier and much more fun too! I topped the salad with a lime vinaigrette.
I admit I’ve been on a mango kick lately, but it’s great in my morning smoothie, fruit salad, and green salads. I even put some in my chicken salad the other day. (Sorry I was too busy eating to take pictures.)
Tropical Salad With Mango & Kiwi
Use organic when available. Serves 4
Tropical Salad With Mango & Kiwi
Ingredients
- 6 cups mixed lettuce
- 1/2 cup grape tomatoes halved
- 1 mango peeled and sliced
- 2 kiwi peeled and sliced
- 3 to 4 tbsp tablespoons extra virgin olive oil
- 2 tbsp fresh lime juice
- 1/2 tsp garlic powder
- 1/4 tsp ground cumin
- 1 tbsp chopped fresh cilantro
- Salt and pepper to taste
Instructions
- Place lettuce in a large bowl
- Add mango, tomatoes and kiwi
- Lightly toss salad
- Mix remaining ingredients in a jar with a lid or a small bowl
- Shake jar of dressing or whisk in a bowl
- Drizzle over salad right before serving
Enjoy!

Florida grows a lot of mangos and imports them too since we have a large hispanic population. Mine have all been delicious. Have a great week.
