Avocado & Strawberry Salad With Honey Basalmic Vinaigrette

Summer is a time when I indulge in lots of green salads and fresh fruit. Today’s salad is Avocado & Strawberry Salad with mixed baby lettuce leaves, cucumbers, grape tomatoes,  onions, and edible flowers.  Sweet strawberries and creamy avocado make a great combination. Mix in baby greens and edible flowers and it becomes a salad to remember. You can easily personalize it to fit your taste  by changing greens to spinach or what’s in season. Cheese and pecans are optional for great crunch and taste. Top it with balsamic vinaigrette.

Use organic when available. Serves 4 to 6

Avocado & Strawberry Salad

Avocado & Strawberry Salad is a mix of baby lettuce leaves, cucumbers, grape tomatoes,  onions, and edible flowers. Optional additions are pecans and cheese.

Ingredients

  • 10 oz mixed baby greens
  • a large handful of edible flowers
  • 1/4 small red onion chopped
  • 1 qt strawberries hulled and quartered
  • 1 small cucumber sliced
  • 1 avocado cut into bite sized pieces
  • 1/2 cup grape tomatoes halved
  • 1/2 cup pecan halves, optional
  • 2 oz cheese - feta, blue cheese or parmesan, optional
  • Salt and pepper to taste

Instructions

  • Mix lettuce, avocado, strawberries, cucumbers, onion, and tomatoes in a large salad bowl.
  • Toss gently..
  • Top with flowers and pecans or cheese if using.
  • In separate bowl, stir the balsamic vinegar and honey together in a bowl.
  • Slowly stream the olive oil into the mixture while whisking continuously.
  • Season with salt and pepper.
  • Drizzle the dressing over the salad just before serving

    Your comment set me thinking. I was sure our European Yellowhammer Emberiza citronella doesn’t occur in the US, so I Googled “Alabama State Bird” and came up with – Yellowhammer – Colaptes auratus. Two completely different birds from unrelated bird families – one a bunting, the other a woodpecker. That’s why we use Latin names between different countries, rather than colloquial names.

    1) “The yellowhammer, also known as the northern flicker or yellow-shafted flicker, became the official state bird of Alabama in 1927. Soldiers from Alabama were nicknamed “yellowhammers” in the Civil War due to their grey-and-yellow uniforms, which matched the colors of the bird. Alabama soon became known as the “yellowhammer state.”

    2) The northern flicker (Colaptes auratus) is a medium-sized bird of the woodpecker family. It is native to most of North America, parts of Central America, Cuba, and the Cayman Islands, and is one of the few woodpecker species that migrate. Over 100 common names for the northern flicker are known, including yellowhammer (not to be confused with the Eurasian yellowhammer)

    3) The Yellowhammer (Emberiza citrinella) is a passerine bird in the bunting family that is native to Eurasia
