Strawberry Yogurt Pops & Mango Pops, Easy Frozen Fruit Pops

It’s a hot and humid Florida summer here, and a refreshing and healthy cold fruit popsicle is a treat.  I like simple recipes which include healthy ingredients and lower sugar. You can increase the honey if desired for a sweeter treat.  Today I’m sharing Strawberry Yogurt Frozen Pops and Mango Frozen Pops (vegan).

 

 


 

Fresh strawberries and plain Greek yogurt with a little honey or agave nectar makes a healthy treat you don’t mind giving to the kids. You can use a blender or food processor, wooden sticks, and popsicle molds or paper cups.  These pops are great for breakfast, lunch, an afternoon snack, or even dessert in the evening.

I buy organic whenever possible.

Strawberry Frozen Yogurt Pops

A frozen summer treat with wholesome ingredients of fresh strawberries, Greek yogurt, and honey.

Ingredients

  • 1 pint fresh strawberries hulled & chopped
  • 2 cups Greek yogurt
  • 2 tbsp honey or agave nectar
  • 1 tsp real vanilla extract

Instructions

  • Blend strawberries, yogurt, honey, & vanilla until smooth - or pulse & leave strawberry chunks
  • Pour into popsicle molds or paper cups with pop sticks
  • Freeze until firm

 

 

 

 

For a vegan, dairy-free pop, we’re using fresh (or slightly thawed frozen) mango cut into chunks with coconut milk.  Mangos are not only a tasty tropical treat, they are healthy for us too.  They are an excellent source of dietary fiber and vitamin B6, as well as a good source of vitamin A and vitamin C. They are rich in minerals like potassium, magnesium and copper, and they are one of the best sources of quercetin, beta carotene, and astragalin.

Here in Central Florida,  mango season is July and August.  They were available the first week in July at my local farmer’s market. Yeah!  If you’ve never bought a fresh mango, here’s some tips. Don’t focus on the color as it’s not really the best indicator of ripeness. A good mango will have a slight give when squeezed. If it’s rock solid give it a few days until it softens. (Always ripen at room temperature or in a paper bag to speed the process up.) Also, a ripe mango will have a “fruity” smell at its stem ends. A ripe medium mango will provide about 2 cups of fruit.

    Mango Frozen Pops

    A healthy and delicious frozen treat using mangos, coconut water, lime juice, and honey for a great summer treat.
    Course Dessert, Snack
    Cuisine American

    Servings 6 pops

    Ingredients

    • 2 cups mango chunks (fresh or slightly thawed frozen)
    • 2 tbsp coconut water
    • 1-2 tbsp tablespoons honey (to taste)
    • 1/2 tsp real vanilla extract

    Instructions

    • Blend or process mango, coconut water, honey, lime juice, and vanilla until smooth
    • Fill ice pop molds or paper cuts with pop sticks
    • Freeze 5 hours until firm

  2. Tempting food photos, Carol! I have been trying to find a good popsicle recipe this week because the humidity is nuts. It’s funny, but none of my local grocery stores have any good popsicles lately. What I really want is to learn how to make a good rootbeer popsicle which nobody seems to have.
