If you like having friends over, I’ve got a real winner for snacks and appetizers. Tomato tarts made with puff pastry are satisfying finger food. Start with a handful of cherry or grape tomatoes, cream cheese and puff pastry. Bake and serve.
Wanting a great edge, I rolled out my puff pastry and cut into rectangles with a pastry crimper, but you can choose the simpler method. Roll out the pastry dough thin, place on parchment paper, spread with cream cheese, add onions and herbs, and bake. Then cut it with sharp knife or pizza cutter.
If you do not like the hot pepper I’ve included, you may substitute a sweet pepper. The recipe provides 4 servings as an appetizer.
Tomato Tart Appetizer
Use organic when available. Serves 4
Tomato Tart Appetizer
Ingredients
- 8 oz puff pastry (1 sheet puff pastry defrosted)
- 4 oz cream cheese
- 2 tbsp green onion finely chopped
- 1 tbsp dried basil
- salt and pepper to taste
- 1 tsp finely chopped hot red pepper (no seeds or ribs)
- 2 cups cherry tomatoes, halved (or plum tomatoes)
- 1/4 tsp ground nutmeg
- 1 egg
- 2 tbsp fresh cream
- 1/2 tsp sugar
Instructions
- Preheat oven to 350 degrees F
- In bowl blend cream cheese, cream, nutmeg, egg, green onion, basil, hot red pepper
- Roll pastry thin
- Cut into rectangles (optional)
- Place on parchment paper on cookie sheet
- Spread cream cheese mixture on pastry
- Top pastry with tomatoes
- Add additional green onions
- Sprinkle top with sugar, salt and pepper
- Bake about 15 to 20 minutes or until tomatoes wrinkle
- Serve
