Quick & Easy Cheesy Baked Tomatoes Gluten-Free

Whether your garden is exploding with fresh tomatoes in the summer or you bought winter tomatoes at the supermarket, a simple and yummy dish is cheesy baked tomatoes.  My recipe does not use bread crumbs and is gluten-free and grain-free.  Even in the winter, baking tomatoes brings out so much flavor. This is a perfect appetizer or first course and also makes a delicious side with many entrees.

I am using a very simple recipe that can be adapted for stunning variations. Your choice of cheese gives you lots of different flavors.  You can try Parmesan, Swiss, cheddar, Mozzarella or Fontina. Many would work very well. Today I am using cheddar and only sprinkled the baked tomatoes with a few chopped green onions. You can also sprinkle thyme on cheddar before baking.  Or try basil on Parmesan.  Options include sprinkling rosemary, marjoram, parsley, or dried Italian seasoning mix on your choice of cheese. If you use large tomatoes, slice 1 inch thick.

Ingredients

  • 6 medium tomatoes or about 2 lb
  • 3/4 cup grated cheese
  • salt and pepper to taste
  • optional herbs for garnish

Instructions

  • Preheat oven to 400 degrees F or 205 C
  • Cut tomatoes in half or slice in 1" slices
  • Place in shallow pan with cut side up
  • Salt and pepper to taste
  • Sprinkle with cheese
  • Bake 5 to 10 minutes until cheese turns golden brown & starts to bubble
  • Serve warm
  • Refrigerate left overs

  1. Great idea Carol! tomatoes are good early in the season here in SW Florida and then when we go home to Oregon they’ll start coming on in late July/August. So we get good fresh ones from Farmers Markets almost every month of the year. What a blessing. I will try this recipe.
