Wondering how your family will eat all those hard-boiled eggs from Easter? How about a healthy, creamy egg and avocado salad?
I love avocado and was happy to see a post on Facebook a few days ago about adding avocado to egg salad. I’ve eaten a lot of egg salad in my day and had to try it.
As always, I make changes to fit my preferences. I encourage you to do the same. I really don’t like mustard in my egg salad but most people do. Do what makes you happy. I added a dash of turmeric; it’s so good for you and I try to sneak in a dash in my cooking. I didn’t have Greek yogurt and used a tad of mayo. It is already so creamy with avocado that only a small amount of yogurt or mayo is required. Make just enough to eat in one day as it doesn’t store well.
Creamy Avocado & Egg Salad
Use organic when available. Serves 3 to 4
Creamy Avocado Egg Salad
Ingredients
- 2 hard-boiled eggs chopped
- 2 hard-boiled egg whites chopped
- 2 small avocados peeled, pitted and halved
- 1 tbsp Greek yogurt or mayonnaise
- 1 tbsp lemon juice
- 2 tbsp chopped green onion
- 1/4 tsp Dijon mustard (optional)
- Salt and pepper to taste)
- Dash of turmeric (optional
Instructions
- Combine all ingredients in a bowl and mash with a fork.
- Spread on bread, crackers, tortilla, a wrap or use as a dip with chips and veggies.
- A scoop on a green salad would make a great lunch.

I had mine on toasted gluten-free oat bread from a bakery in Tampa. I also used baby spinach with the spread. You can serve it with crackers and vegetables, as a dip, or with a green salad. Enjoy and make it your own!

I’m with you – I don’t like mustard in my egg salad! And that gluten free bread looks really good!
I think we’re in a minority in regards mustard. My sister and I keep trying to find creative ways to make recipes w/o mustard. The bread is delicious!
