I’m still in love with spring strawberries and today I’m sharing a fruit couscous salad with apples and strawberries, two of my favorite fruits. I’m using organic apples and strawberries with a quick box of couscous. For those you wanting to avoid gluten or wheat, try substituting fluffy brown rice.
It makes a great side for dinner or the main event for lunch. The addition of cashews add a little more protein and a lot of crunch. The salad has no added sweetener.
Apple Strawberry Couscous Salad
Use organic when available. Serves 4 as a side
Apple Strawberry Couscous Salad
Ingredients
- 2 cups cooked whole wheat couscous or cooked brown rice
- 1 cup chopped apples
- 1 cup sliced strawberries
- Optional use 1/2 cup strawberries and 1/2 cup raspberries
- 3 tbsp cashew pieces
- Optional, several strawberry halves and whole cashews for garnish
- 2 tbsp orange juice
- 1 tbsp apple cider vinegar
- 2 tbsp extra-virgin olive oil
- 2 tsp minced shallot
- Salt and pepper to taste
Instructions
- Prepare couscous (or rice) according to package directions
- Wash and slice 1 cup each of fresh strawberries and apple
- Mince shallot
- Combine olive oil, apple cider vinegar, shallot and orange juice in a large bowl
- Salt and pepper to tasted.
- .Add fruit first making sure to coat apples
- Then add couscous and cashews
- Toss gently
- Optional, decorate with strawberry halves and whole cashews
- Serve at room temperature or slightly chilled

I love this Apple Strawberry Couscous Salad! It makes a great pre-workout meal, as well as a main course for dinner. Contrary to strawberries, apple is my least favorite fruit and your creative recipe makes me love it. Also, I love the idea of adding crunchy cashews to the mix!
