A bowl of deceptively nutritious guacamole that no one can resist. What are the secrets to this spicy health treat? It could be the diced jalapeno or the squeeze of fresh orange juice. Perhaps it’s the hint of Moringa powder which adds vitamin A, calcium and iron. No matter what the secret is, expect your guacamole to disappear when placed on a buffet table.
Moringa oleifera, also known as horseradish tree, ben tree, or drumstick tree, is a small tree from India, Pakistan, and Nepal that has been used for generations in Eastern countries to treat and prevent diseases such as diabetes, heart disease,anemia, arthritis, liver disease, and respiratory, skin, and digestive disorders.
This spicy dish is usually used as an appetizer with tortilla chips, but it is great as a topping on tacos, tortillas and fajitas as well as fish and chicken dishes.
For a buffet table at a party, have fun and get creative. Place guacamole in a bowl. Add a shredded carrot at the top of the round bowl to make hair. Use circles of small carrot for eyes topped with a small piece of cheese or a nut. Use another for a nose. The mouth is a pickle turned sideways with a little ketchup to make it red. Add sprinkles of cilantro or parsley on the carrot hair. Voila! A cute centerpiece of guacamole man!
Other presentations include individuals cups of guacamole or baked pasty shells.
Spicy Guacamole with Moringa
Use organic when available. Serves 5 or 6
Spicy Guacamole with Moringa
Ingredients
- 2 tsp raw Moringa powder
- 4 ripe avocados, peeled, seeded & halved
- 1 jalapeno, diced
- 1/2 cup chopped red onion
- 1/2 cup quartered cherry tomatoes
- 1/4 cup chopped fresh cilantro
- dash of salt and pepper
- 1/2 tsp cumin
- 1 lime juiced
- 1/2 orange juiced
Instructions
- Place avocados in a mixing bowl
- Use a fork to mash well
- Add remaining ingredients
- Stir until smooth
- Serve with tortilla chips and a cold beverage
- Or use as a topping for tacos, tortillas, and fajitas
- Or serve in baked pastry cups
